Whole Eggplant Fry

Ingredients: Whole Eggplant Long 2 piece
Onion 1 cup(chopped) or ring
Green chili 3-4 pieces
Red chili powder 1 tea spoon

Turmeric powder 1/2 tea spoon
Salt according to your taste
Lemon juice 1 tea spoon
Ginger 1 tea spoon
Oil-for deep fry

Procedure: Clean the eggplant well. Cut both of the eggplant top to bottom. Keep joint at head of them. Put red chili powder, turmeric powder and salt in a bowl. Make paste. Add the mixture both side of the fish gently. Keep it 1 hour.
Heat oil in a pan. Fry Onion and Green chilli until Brown. Take off from oil and keep a side now same oil fry both side of the fish in lower medium heat until turn brown. Garnish with onion and green chilli and serve with white rice.
