Zucchini With Yellow Peas

Ingredients: Whole yellow peas 1 Cup (soaked in water for 3-4 hour)
Zucchini cut into small pieces 2 cup
Oil 2 tablespoons
Coriander seed 1 teaspoon
Cumin seeds 1 teaspoon
Onions finely chopped 1 large
Ginger paste 1 tablespoon
Garlic paste 1 tablespoon
Turmeric powder 1 teaspoon
Red chilli powder 1 & 1/2 teaspoons
Tomatoes finely chopped 1 large
Green chillies 4-5
Coriander powder 1 teaspoon
Fresh coriander leaves chopped 2 tablespoons
Salt to taste
Method: Heat oil in non stick pan till smoking point. Lower heat and add coriander seeds, cumin seeds and onions and saute till onions are browned.
Put yellow peas, salt, ginger paste, garlic paste, turmeric powder and 1 tsp red chilli powder and mix well. Add tomatoes to the pan, mix and saute for 10 minutes or peas are more than half cooked.
Add green chillies, zucchini and little water. Mix well cover and cook for 4-5 minutes. Salt remaining red chilli powder, coriander powder and mix well, cover and cook till zucchini is soft. Garnish with coriander and serve hot.
